Summer Salad Dressings – A Fresh Approach

As consumers, if we cannot pronounce the ingredients on the salad dressing label how can we expect our bodies to process it? Sometimes we snatch it off the shelf anyway because we want flavor…Pop! Zing!…and, we want convenience.

We are offered so many alternatives to steer us away from the clutches of processed foods, and, I believe that our options and choices are greater than they ever have been. There are occasions when I become tired of and nauseated by the limited selections at home because of cash flow and/or I haven’t planned well. When I eat I want to enjoy, remember and wish to have it again!

I worship the process of enhancing flavors of wholesome foods with fresh ingredients. I cannot resist salivating when I conjure images of…Avocado, Organic Greek Yogurt, Limes, Green Onions, Cilantro, Extra Virgin Olive Oil, White Wine Vinegar, Honey, Raspberries and Sea Salt. Fire up the grill! Let us slice up the mixed vegetables and succulent sweet fruits; toss in spring greens and romaine; round up pork, chicken and beef; and, prepare the catch of the day. Spring open the panty door and invite your food processor to the counter, dust off the button panel of your blender and welcome your whisk to do a vinaigrette dance by creating your OWN dressings! Everyone has a canning jar or two for storing…what are you waiting for!

Sweet & Creamy Avocado Maple Dressing

1 avocado

¼ cup of organic Greek yogurt

1 T. maple syrup

1 T. apple cider vinegar

Juice of 1 lime

Salt and pepper (to taste)

**Combine all ingredients in a food processor or blender and blend until creamy.

 

Tasty Green Onion and Cilantro Dressing

¼ cup white wine vinegar

¼ cup fresh lime juice

1 cup extra virgin olive oil

½ t. mustard

1 cup of diced green onion

½ cup of cilantro

Salt and pepper (to taste)

**Combine all ingredients in a bowl and stir until well blended.

 

Fresh and Light Raspberry Vinaigrette

¼ cup apple cider vinegar

1 t. sea salt

2 T. honey

3 T. water

½ cup of raspberries

½ cup extra virgin olive oil

**Blend all ingredients in a blender on low until well blended.
