Homogenization is a process used to prevent the milk fat from separating out of milk products. The liquid is forced through an ultra fine mesh at high pressure, which breaks up fat globules, dispersing them evenly throughout the liquid.
Ultra-high-temperature sterilization (UHT) is sterilization at higher temperatures, and for shorter times, than high-temperature short-time sterilization.
Both raw and pasteurized milk harbor bacteria but the bacteria in raw milk are the healthy bacteria of lactic-acid fermentation while the bacteria in pasteurized milk are the bacteria of spoilage.
